This Festive Cocktail – How to Make It

WHere is a simplified interpretation of a drink featured on the seasonal cocktail list. It's a batch premix which is packed full of flavours of the festive period, making it excellent for a holiday party. Reserve the remaining syrup for morning drinks, puddings, or to make more rounds of bikinis.

The Bikini Cocktail

Makes enough for 10 guests

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Directions

To prepare the Syrup: Combine all the ingredients in a pot, bring to a light boil, agitating to dissolve. Then, turn off the heat and let it to cool down fully. Decant to a sterilised bottle, cap it and refrigerate it chilled, it can be stored for around a month.

For the Batch Mix: Combine every spirits and syrup in a large bottle, let it rest for one hour, then filter it preferably using a fine cloth, so it's fully clarified.

To serve: Measure 85ml from the premix into a cocktail shaker packed with ice, gently stirring carefully for about 60 seconds to cool it down. Filter into a chilled martini glass or a similar vessel, top with a few cranberries and complete it by giving it a brief mist of the essential oil over the top.
